Position Details

General Statement

Culinary Services (CS), a division of Auxiliary Services, provides meals for over 12,000 customers a day becoming an integral part of campus life and the overall college experience. CS proudly provides Montana State University students with not only a repertoire of various cuisines, cooking styles, and flavors, but a comfortable atmosphere to meet friends, study, and simply relax. The division is comprised of 2 residential dining halls, 9 retail operations, Brick Breeden Fieldhouse and Bobcat Stadium Concessions, Fork in the Road food truck, MSU Catering, Indulge In-House Bakery & Salads, and the Farm to Campus Program.

The dining halls serve over 10,000 meals per day and are open 7 days a week from 7am – Midnight providing breakfast, lunch, dinner, and Late Night Bites. Specialty dinners are served multiple times a month highlighting Montana Made, holidays, other special events, and student/parent recipes.

The retail operations serve fresh meals from breakfast to dinner featuring a wide variety of cuisines. May be asked to participate in MSU Catering projects also.

Indulge Salads is an in-house production department operating 7 days/week providing a wide variety of items for all culinary departments on campus. Product ranges from cleaned and cut vegetables to savory or sweet salads to salsa and many other made to order menu items.

University Catering provides full catering services for campus and other contracted events. A sample of the 2000 events worked per year include: VIP meals, buffets, served meals, coffee breaks, drop-offs and sack lunches. The number of catered events can be upwards of 15-25 daily.

Duties and Responsibilities

This applicant pool is for two levels of Cook III positions.

Cook IIIs are assigned the management of production and service for 1 concept.

Cook III, Srs. are assigned the management of production and service for 2-4 concepts.

Duties include but are not limited to:

  • Skillfully prepare a wide variety of recipes while positively and professionally interacting with customers

  • Ensure quality product is being served

  • Provide leadership, training and/or direction for staff

  • Monitor inventory, keep records, and order accordingly

  • Direct the cleaning, disposition and storage of foods, supplies, and equipment

  • Properly handle food in accordance with FDA food codes

  • Direct staff in the cleaning of areas and equipment in accordance with the sanitarians recommendations

  • Perform other general kitchen duties

  • May assist with recipe and menu development

  • And actively contribute to the team by performing other duties as needed in support of the department’s mission.

Required Qualifications – Experience, Education, Knowledge & Skills

  • Progressively responsible high volume cooking experience and/or cooking multiple cuisines or an equivalent combination of relevant education and experience.

  • Experience leading, directing, and/or training staff.

  • Experience providing excellent customer service.

Preferred Qualifications – Experience, Education, Knowledge & Skills

  • Advanced degree or certificate in the hospitality, culinary arts, or related field(s).

  • Experience organizing and timing kitchen production.

  • Experience with inventory control.

  • Experience with recipe testing and development.

Shifts: Vary across departments 7 days per week.

10month and 12month positions available. All positions are eligible for full benefits 12months of the year.

Will work evenings, weekends, long hours, consecutive days during busy periods, and occasional holidays as the school and event schedule demands.

May occasionally work outside and in inclement weather assisting with special events.

Serve Safe certified or have the ability to become certified.

Physical Demands

  • Normal kitchen, cooler, freezer, dock environments.

  • Stationary and/or moving about for long periods of time.

  • Moving product up and down stairs.

  • Frequently moving and lifting containers/product weighing up to 50 lbs and occasionally up to 100lbs.

  • Bending and/or kneeling while stocking product.

  • Gripping handles on small kitchen utensils and other equipment.

  • Performing repetitive motions such as, but not limited to, chopping, stirring and serving.

  • Exposure to cleaning chemicals on a daily basis.
