Description

Hiring for 2 Detention Center Cooks

General Statement of Duties

Performs work in an institutional kitchen to provide meals for inmates (approximately 100) at the Butte-Silver Bow Detention Center. Oversees inmate workers in a secure facility.

Distinguishing Features of the Class

This is responsible physically demanding and technical work in a law enforcement setting involving food service operations of the detention center. The work is performed under the general direction and supervision of the Kitchen and Laundry Supervisor, but some leeway is granted for the exercise of independent judgment and initiative. The nature of the work performed requires that an employee in this class establish and maintain close cooperative working relationships with other detention center employees. Provides direction and oversight to inmate workers assigned to kitchen duty, particularly in the absence of the kitchen supervisor.

An employee in this class is required to maintain complete confidentiality on all matters pertaining to law enforcement operations, Law Enforcement Department personnel, and the general public.

This position is covered under a Collective Bargaining Agreement between the City-County of Butte-Silver Bow and the LIUNA Local No. 1686 (Detention Center Cooks).

Duties/Responsibilities

DUTIES/RESPONSIBILITIES:

Examples of Essential Work (Illustrative Only)

  • Prepares food and ensures meals are delivered in a timely manner;

  • Records detailed information regarding: time of meals, meal content, number of meals served, and food temperature;

  • Follows approved menus to ensure prepared meals comply with State regulations, medical orders, nutritional and other required standards;

  • Oversees inmate workers assigned to kitchen duty;

  • Documents infractions and refers to kitchen supervisor;

  • Oversees kitchen clean-up;

  • Complies with standards of cleanliness and health regulations and follows safety and security measures in the kitchen including daily inventory of knives and utensils;

  • May receive deliveries;

  • Ensures food and supplies are handled and stored properly;

  • Performs related work as required or directed;

  • Perform all duties and work assignments in a safe, healthy, and environmentally sound manner. Specifically, complying with the Health & Safety Program; maintaining work areas in a safe and orderly manner; identifying and reporting unsafe conditions; reporting all accidents; wearing required personal protective equipment; and attending safety-related meetings, training sessions, fit testing, etc.

  • Perform all duties and work assignments in compliance with project quality requirements.

  • Act responsibly and ethically, and in conformance with generally accepted business, occupational, and professional standards.

  • Perform other duties as assigned.

Qualifications

QUALIFICATIONS

Required Knowledge, Skills and Abilities

  • Considerable knowledge of meal preparation for a large number of people;

  • Working knowledge of the use and maintenance of institutional kitchen equipment used in food preparation;

  • Working knowledge of health and sanitation requirements established by the Health Department;

  • Basic knowledge of daily nutritional requirements and special dietary considerations (medical, religious, etc.);

  • Basic knowledge of business English and arithmetic;

  • Skill in the use of modern food service equipment (slicers, blenders, mixers, grinders and knives);

  • Ability to establish and maintain effective working relationships with diverse individuals and groups;

  • Ability to make responsible decisions in accordance with established policies and procedures;

  • Ability to communicate effectively in the English language orally and in writing, and to follow instructions;

  • Ability to exercise control and remain calm in a stressful environment.

Acceptable Experience and Training

  • Requires high school diploma or equivalency supplemented by training in food preparation. Experience in a large institutional setting or any equivalent combination of experience and training which provides the knowledge, skills and abilities necessary to perform the work if preferable.

  • Graduation from a culinary arts program is desirable.

Required Special Qualifications

  • Must pass an extensive background investigation;

  • Must be a resident of Butte-Silver Bow during employment according to Butte-Silver Bow ordinance. See below.

"2.08.010 Residence during employment.

From and after October 1, 1979, all employees of the local government of Butte-Silver Bow shall be bona fide residents within the boundaries of Butte-Silver Bow during the period of their employment by the government of Butte-Silver Bow.

  • Sufficient manual dexterity, with or without reasonable accommodation, which permits the employee to safely operate ranges, ovens, choppers, slicers, shredders, and similar food preparation equipment;

  • Sufficient personal mobility, with or without reasonable accommodation, which permits the employee to stand for long periods without a break, and to transport kettles, pots and supplies weighing up to seventy-five pounds.
