Lead Butcher: Must be able to 'hit the ground running' other than learning our processes. Which means the ideal candidate should have a thorough knowledge of Kill Floor and Cutting Room operations. Hazard Analysis Critical Control Point (HACCP) knowledge is a definite plus. Experience operating under Federal Inspection is also a plus. Neither HACCP or Federal Inspection experience are 'must haves' but are very desirable. The 'Head and Shoulders Above' candidate will also have a working knowledge of making smoked products such as hams, bacon, and jerky. The Lead Butcher should be able to think on his/her feet and be able to 'lead' the crew keeping a harmonious atmosphere not hostile. The Lead Butcher should be able to take instructions and manage the work load accordingly. Must be a minimum of 18 years of age. Wage: $25/hour to start with progression to $30 in 2-3 years or possibly sooner.
